Kelly's Vegan Recipe Corner:
Cashew Milk

  • Soak 1 cup of raw unsalted cashews about 4-5 hours.
  • Drain. Wash. Put them in the blender.
  • Add 3-4 cups of water.
  • Maple syrup & vanilla to taste.
  • Blend about 2 min.
Et voila! Its that easy!
Store in a glass jar in your fridge.

How much water you add is really up to you. Depending on what I'm using it for, it could be a little more thick or thin. I prefer maple syrup, because it truly is my favourite food group. :-) Of coarse you can change it as you wish. Some folks like agave nectar.
I love to add a pinch of cardamom. Especially on cold days, and when I warm the milk.

This lovely drink can be enjoyed cool or warm.
In the winter, I LOVE this in a Chai Latte!!
